December 12th - Holiday Baking Goodness
We haven’t really written anything about our favorite holiday traditions yet (besides St Nicholas Day), but this tradition is gastronomic, and we’re really looking forward to seeing how it turns out if you try this recipe! It’s a wonderful thing to bake during this time of year: it warms up the kitchen, it makes everything smell delicious, and at the end of it, there’s yummy treats to eat! Even if you’re not a baker (maybe you’re a butcher or a candlestick maker?), we’re sure you’ll still enjoying eating this :)
For all of you who do enjoy baking cookies, cakes, and other treats, our treat today is a delicious recipe for you and your loved ones to enjoy, or to delight your friends with at a holiday gathering!

Layer Cake Recipe
Ingredients
- 4 egg whites (m)
- 4 egg yolks (m)
- 2 eggs (m)
- 250 grams of butter or margarine
- 250 grams of sugar
- 8g (1 packet) of vanilla sugar
- 1 pinch of salt
- 150 grams of wheat flour
- 100 grams of cornstarch
- 3 teaspoons of baking powder
- 6 tablespoons of rum
Directions
Preheat the oven to 400°F (if you have a gas oven, you may wish to use the broiler instead).
Beat the eggwhites until stiff and then put them to the side.
In a large mixing bowl, mix the butter or margarine until it's soft. Add in the sugar, vanilla sugar, and salt and mix well.
Stir in the two eggs for about 30 seconds, then stir in the egg yolks.
In a second bowl, combine the flour, corn starch, and baking powder. Make sure they are well-mixed and sifted.
Mix in half of the dry bowl into the first bowl, then half of the rum (you can also try Cointreau or Amaretto). Repeat with the remaining contents of the dry bowl, and the rest of the rum. Finally, add in the egg whites.
Grease your cake pan well (put baking paper on the bottom). Spread about a tablespoon of the batter evenly on the bottom of your form, and place it in the oven about 8" under the heating coils. Bake for 1-2 minutes until the layer is golden brown. Take the pan out and add another layer of batter. Continue this process until you've used all the batter.
Tip: Make the cake 2-10 days before you're going to eat it! It tastes better that way
